What is Rouge de Bordeaux flour?

Rouge de Bordeaux flour is a hard red winter wheat flour that originated in France's Bordeaux region and predates . It has a nutty flavor and can be used in many baked goods. Which is healthier, red wheat or white wheat?  The dietary fiber present in hard red winter wheat grains is high.
